How do you like your eggs? Apparently it's common to have a specific way you eat them. My egg preferences have evolved over the years; of course as a kid I would only eat scrambled eggs with a particular hate for hard-boiled - the texture of the yolk REALLY freaked me out. Around 13 I saw my mom make a culmination of an over-easy/sunny side up egg and I thought that looked really cool so I started making those on top of toast for something fancy. My standard, tried and true, is scrambled with a million veggies in it, like an omelette without that weird egg skin (it baffles me when people ask for omelettes well done!). It's only been in the last two months that my preferences have drastically changed - it came more out of necessity at first, when I was getting up at 7:30 for bootcamp and in no mood to cook up eggs at that time of day, that I bit the bullet and started boiling eggs the night before. The forward vision made me feel like a champion so much that I wrote about it once before. And now, voila, I can't get enough of them. It's such an easy snack, no clean up, and all of a sudden I have no qualms about texture.
Boy I am happy to have broadened my horizons for this tasty, easy snack.
